Chicken Breast 280g
Green Pepper 1ea
 Onions 130g
 Spring Onions (weight) 60g
 Basmati White Rice 60g
 Butter 40g
 Panko 15g
 Chicken Stock Bouillon 10g

Method

1. Preheat your oven to 190c/fan 170/gas mark 5.
2. Peel the onion and deseed the pepper, then cut both into thick chunks. Top and tail the spring onions and cut into 2cm slices.
3. Cut each chicken breast into three pieces.
4. Add a little vegetable oil to a saucepan over a medium heat. Carefully add the onion and pepper chunks, then stir for 2 minutes. Add the spice blend then stir for a further 30 seconds.
5. Slowly pour 500ml of boiling water over the onion and pepper mix, ten add the stock cube. Stir until thickened, then remove from the heat and mix in the butter.
6. Pour the sauce into a casserole dish and add the chicken pieces. Scatter over with the spring onion and cook in the oven for 20 minutes,
7. After 20 minutes, remove the chicken from the sauce and place onto an oven tray. Cover the casserole dish with foil and return to the oven. Scatter the panko crumb over the chicken and also return to the oven. Cook both until the panko crumb has browned, which should take around 15 minutes.
8. Now add the rice to a saucepan of boiling water with a pinch of salt. Cook for 10 minutes then drain.
9. Divide the rice between two plates to serve. Add the curry sauce and top with the chicken pieces.
