Skinless Boneless Chicken Thigh 350g
Green Pepper 1ea
Cherry Tomatoes 133g
Wholemeal Pitta Bread 2ea
Natural Yoghurt 1ea
Lambs Leaf Lettuce 80g
Lemon 1ea

Method

1.Preheat the oven to 190c/Fan 180/Gas Mark 5.
2. Deseed and cut the pepper into 6 equal wedges.
3. In a large mixing bowl, stir together the pepper, chicken thighs, a tablespoon of cooking oil and the BBQ spice blend. Place on a baking tray, season with salt, then cook in the oven for 20-25 minutes on a baking tray until cooked through.
4. Halve the tomatoes and cut the lemon into wedges for garnish.
5. Divide the lambs leaf and tomatoes between two plates and serve with the chicken thighs peppers and hot pitta breads.
6. Drizzle over  with natural yoghurt and a squeeze of lemon to taste.
